Luis Xavier Rojas
Born native of the city of Dallas, Luis Xavier Rojas grew up here in Dallas. Graduated from Jesuit College Preparatory School, He went to UT at El Paso to study civil engineering, but worked his way through college in restaurants. After that, he came back to Dallas, worked for a restaurant in Las Colinas, Mustang Café, for 10 years, learning more about wine, spirits, service, and hospitality.
After that, he spent 10+ years with another company, Restaurant Works, managing concepts like Ferre, Cru Wine Bar, Victory Tavern, Steel, and Princi Italia in locations all over the country like Atlanta, Houston, Austin, and Denver. Seeing what different markets had to offer and how these markets differ, Luis was able to create programs with the different chefs on menu and wine pairings, catering events, wine dinners, beer dinners, spirit tasting and more.
In 2016, Luis was approached by Jeffrey Kollinger, CEO and President of IHG Services and The Spice of Life Catering. Meeting with him, his brother Ross Kollinger, the COO of said businesses, and Gerald K. Smith, their executive chef of Tillman’s Roadhouse, it was just the perfect combination of knowledge, passion, culinary expertise and drive.
Luis is and has been married to Lina Street, an executive with another hospitality group, for over 13 years. They have two lovely daughters, 9 and 12. Again, a Dallas native, Luis and his family live in Flower Mound. If you don’t find Luis at the restaurant, you might find him riding his bike around Oak Cliff, or the Trinity River Trails, or around White Rock Lake, or just back home.
