Gerald Smith Named New Executive Chef at Tillman’s Roadhouse

DALLAS – Oct. 23, 2017 – Innovative Hospitality Group announces that Gerald Smith has been named the new Executive Chef at Tillman’s Roadhouse. Chef Smith, who comes to the Dallas eatery from Hogsalt Hospitality in Chicago, Illinois, is a dynamic modern American chef with an approach to cooking that borrows from French techniques, Asian boldness and Italian richness. Smith is expected to bring innovative changes to the menu of the long-standing Oak Cliff restaurant which takes a modern spin on the classic roadhouse.
“We are excited about Gerald leading the culinary execution at Tillman’s Roadhouse. He is energetic and creative and will bring a new twist to Tillman’s Texas cuisine,” said Jeffrey Kollinger, CEO of Innovative Hospitality Group which owns Tillman’s Roadhouse. “Since purchasing Tillman’s in 2016, we’ve been evolving the restaurant. Hiring Gerald and bringing his talent to the Dallas restaurant scene is the most important step.”
Tillman’s Roadhouse is known for its sophisticated comfort food and Chef Smith will begin making his mark on the menu with updated offerings this winter. Diners can expect a completely revamped menu in the spring.
“I am very excited to be at Tillman’s Roadhouse. I am looking forward to pairing my personal flair, cooking style and experience with Jeffrey’s vision for the restaurant,” say chef Smith. “We are eager to offer something new to the Oak Cliff dining scene.”
A graduate of the Culinary Institute of America, chef Smith has studied under and worked alongside some of the best chefs and restaurateurs across the country, including Jean George Vongerichten, Mario Batali, Stephen Starr, Rich Melman and Brendan Sodikoff. Most recently, chef Smith was Culinary Director at Hogsalt Hospitality in Chicago. Prior to that, he honed his craft as corporate executive chef for Lettuce Entertain You Restaurants, overseeing multiple new concept openings in his time with the legendary Rich Melman. Prior to that, he was chef de cuisine for James Beard Award winning Stephen Starr at STARR Restaurants in Philadelphia, Pennsylvania.
