87 WAYS
1 oz Tanqueray Ten Gin, 1 oz fresh L/L juice, 1 oz S/S, 1 oz apricot puree, 3 dashes of peach bitters and fresh lavender sprig. Sandwich the lavender and add all the ingredients. Shake. Served on the rocks in a collins glass. Garnish with lavender sprig.

LOW COUNTRY
2 oz Buffalo Trace Bourbon, 1 cherry, 1 lemon wedge, 1 sugar cube, 3 dashes bitters, ¼ oz S/S and 1 oz Passion Fruit Puree. Muddle the cherry, lemon and sugar cube (soaked in bitters) add with ice then add bourbon, S/S and passion fruit puree, shake and pour into glass. Top off with club soda. Garnish with cherry and orange slice.

SASSY SARA!
1 oz Absolut Vanilla Vodka, 1 oz Cruzan Pineapple Rum, 1 oz fresh L/L juice, 1 oz S/S and 2 slices of red jalapeno pepper. Shake and strain into a chilled martini glass. Garnish with a small slice of red jalapeno pepper.

PRICKLY PEAR MARGARITA
1 ½ oz Patron Anejo Tequila, ¼ oz Cointreau, 1 oz fresh L/L juice, 1 oz S/S and 1 oz prickly pear puree. Shake and strain into a salted martini glass, garnish with lime slice.

GINGER LEMON DROP
1 ½ oz Belvedere Cytrus Vodka, ¼ oz Cointreau, 1 oz fresh L/L, 1 oz S/S, 1 oz sweet ginger puree. Shake and strain into a sugared martini glass. Garnish with candied ginger.

Noted as one of the nation's top 5 mixologists by Food and Wine January 2006, Lucy Brennan is a household name in the cocktail industry. Her one of a kind concoctions, fabulous Portland, Oregan restaurant and lounge, and dedicated following, have earned her many accolades as she actively reinvents today's cocktail culture.

A native of London, England, Lucy moved to New York City at sixteen, where she worked as an assistant to two Wall Street stock traders. Her adventurous spirit later took her to San Francisco, where she served four years as a beverage and assistant restaurant manager at the San Francisco Park Hyatt. Lucy's first bartending experience was not until she moved to Portland, Oregon in 1994. After five years of mixing and shaking her way to bar manager at Portland's Saucebox restaurant on SW Broadway, Lucy had found her true calling. Read full bio >
